Today is J's concluding 24-hour interval of 4-year-former preschool. He has a fiddling graduation ceremony tonight with his class and they sing a little vocal.

I would currently be sniffling and tearing upwardly except that he's going to pre-K adjacent yr at the aforementioned schoolhouse. (And we'll be doing the graduation again then.)

So while it's been a major twelvemonth of growing up for him, I'm non yet staring downwards the stop of preschool and the starting time of kindergarten.

Whew.

M's last 24-hour interval of 1st grade is Friday and then they are both off for the summer! I'm excited about having some fun afternoons together, and I'm hoping this weekend starts u.s.a. off strong!

We're planning to hit the pool a bunch for certain. And as a bonus, my parents are having the kids over for a spend-the-nighttime party. 🎉

I haven't even decided what my husband and I might practise. It's such a gift to have a night to ourselves, information technology about doesn't thing. (And specially a morning also – how-do-you-do sleeping in!)

Enough rambling from me though – let's dive into this deliciousness!

I've probably mentioned at to the lowest degree a dozen times how nosotros are e'er trying to eat more seafood in our firm.

They recommend at least two servings of seafood a week and salmon is on the card for dinner near once a week. (Such as the honey lime salmon and easy BBQ salmon recipes I just shared this past week.) And I ofttimes try to squeeze in a 2d seafood serving at tiffin.

My tuna spinach salad is a long-time favorite, pesto tuna salad is tangy and bright and I recently started making this southwest tuna salad for a fun, new twist!

I apparently love southwest flavors. My southwest vegetarian quinoa skillet, southwestern chopped salad and southwest chicken skillet dinner are some of only many hither on this blog!

And today I'm taking some of those same favorite flavors, ingredients and spices to this southwest tuna salad. ❤️ It's got only the correct amount of creaminess and is loaded with poly peptide!

It's a corking luncheon to go along you full all afternoon and power you through your day, whether y'all're up against afternoon meetings or upward confronting an afternoon with the kids. 😬

Plus, there'south tons of other additions you can mix in and different ways to serve it.

Notes on making southwest tuna salad:

  • I use all Greek yogurt for this recipe, but y'all could certainly utilise mayonnaise or half mayo and half Greek yogurt if yous prefer.
  • You could likewise add a modest (four oz.) can of diced light-green chilies for some extra fun flavor.
  • Want to add together a trivial spicy twist? You can add a finely diced jalapeño pepper to the salad, or sprinkle in a bit of cayenne pepper. Or pinnacle it with a few dashes of hot sauce or a drizzle of sriracha.
  • You can add in diced avocado or top this salad with sliced avocado. You could fifty-fifty serve it in a partially scooped out avocado for a tuna salad avocado boat!

As for serving ideas

My become-to ways to serve this are equally a southwest tuna salad sandwich, in a whole wheat wrap or a lettuce wrap or on baguette slices for an appetizer. Sometimes I just scoop it over some mixed greens or Bibb lettuce and consume information technology every bit a salad.

In the summertime, you could also serve this stuffed into a hollowed out ripe heirloom tomato. Or stuff it in an avocado.

Desire to make this ahead? It's a great repast-prep recipe but I suggest calculation the cilantro and the fresh lime juice when yous're ready to serve it. That style they can add a popular of freshness and effulgence afterwards it'south been sitting in the fridge.
